Guacamole: Here's the official announcement!

Guaca-Mole Mexican Restaurant has plans on opening the last week of March, is a locally owned
restaurant by Fernando Martinez, Yaniel Martinez and Gabriel Cardenas.

Guaca-Mole will be unique Mexican restaurant with authentic cuisine, casual and affordable; with
prices ranging from $8 to $16.

The look of the restaurant is modern with decorations imported directly from Mexico, like Catrina
dolls, Oaxacan Alejibres, and Talavera pottery. The restaurant has a 150 seats with a bar featuring
an eclectic drink menu with unique margaritas and cocktails. We will be open seven days a week
lunch and dinner.

Fernando Martinez had opened two previous local restaurants, and then he moved and travelled
to the Caribbean learning new techniques and taking some time off. He returned to the US to
Miami where he worked with Chef Douglas Rodriguez “The Grandfather of Nuevo Latino cuisine”
in the Astor hotel and The South Beach Hilton Bentley as his Executive Sou chef. He was also the
Executive Chef at Café L’Europe an award-winning French Restaurant in Palm Beach.

Yaniel Martinez is Fernando’s cousin who worked with him before his departure. Chef Yaniel
was the Executive chef at Havana Rumba’s where he was also a partner at the Middletown
location. Chef Yaniel left to join ventures with his cousin Fernando Martinez when he came back
to Louisville. “I’ve always known we were going to be business partners , we have the same vision
and drive, after all we’re more like brothers”-Yaniel Martinez

Gabriel Cardenas is a local successful business entrepreneur who over the years of friendship with
Fernando Martinez has appreciated his talent and creativity, has decided to join venture with the
Martinez team. “I’ve seen the potential and creativity of this team, it is a venture I’m excited to be
a part of.” – Gabriel Cardenas.

In all, Guaca-Mole brings to Louisville’s east end a unique, creative, cuisine, ambiance at a great
affordable price. The main focus is the food, service & authenticity. The menu will feature
authentic Mexican cuisine with a modern twist like tacos al carbon with smoked pineapple salsa.
Also, moles, pozole, ceviches and of course GUACAMOLES.
