I worked at a resort one summer in college that charged a "service charge" with each meal. The service charge was roughly 15%. The wait staff got about 2%. Needless to say, no career servers there, just a bunch of clueless students. We really sucked. Really.

Not sure about Kashmir but, the owner of a well known local place used to make the waitstaff tip him out every night. He ran the bar but made them give him some of their tips justifying it by saying he was tending bar. I always thought that was pretty scummy.

Well, he and his wife recently sold the longtime germantown/paristown establishent which focused on italian pub fare and occasionally had great chicago/italian beef sandwiches and pasta. I assume he is out of the business due to the recent sale and this should not reflect on the new owner. I stopped going there for a very long time because of the owner but it was sad because I loved the blue collar atmosphere and the food. I am willing to bet it is a lot better there now. Does that help? :)
