Kind of a breathless press release (unedited), but it sounds like this place could be interesting, if execution is up to the announcement. :oops:

Hyatt Regency Louisville announced today their new local, southern eatery, Sway, will open April 19. Based on the farm to fork concept, the restaurant brings Southern fare, inspired by the rich heritage of the region to Fourth Street. The seasonal menu combines the flavors of Southern kitchens, American favorites and Sunday dinners with the freshest ingredients from local farms, dairies and butchers.

Guests will notice Sway is something new from the moment they’re greeted. The main entrance of the new space boasts an inviting “front porch” from the main lobby of the hotel into the restaurant. A second entrance to the vibrant bar has also been created along Louisville’s trendy Fourth Street, with glass walls that slide open allowing patrons to enjoy the excitement of downtown. The decor produces an inviting, down-home feel, with stacked wood accents and earth tones. The main dining room is inspired by the characteristics of quintessential Kentucky, highlighting the heritage that makes it what it is today.

“We designed Sway to be a centerpiece of the new Hyatt Regency Louisville, a new dining experience for our guests and our neighbors here in the Louisville community,” said Donna Marquez, Hyatt Regency Louisville’s General Manager. “Sway’s menu is a tribute to our city and to the hotel’s 34 year tradition of being a landmark in the Louisville community. We can’t wait for guests to see and – more importantly – taste our new Southern Way.”


Savory, locally inspired menu items include New York Strip Steak with Smoked Bourbon Sea Salt and a Bourbon Shallot Sauce, Sustainable Salmon with a Wild Mushroom Broth, Bacon Cheddar Grit Fritters, Spicy Shrimp with Local Beer Sauce, Black Eyed Pea Soup with Andouille Sausage, Southern Fried Chicken Cobb Salad, Deviled Eggs, made with cage free local eggs, Fresh Fried Pork Rinds and of course, Fried Green Tomatoes. For dessert, guests can enjoy Sway’s tribute to the locally made Girl Scout Cookies, and the 100th Anniversary of the Girl Scouts, with a seasonal sweet inspired by the delicious treats.

Mornings at Sway start with seasonal fruits, cage free eggs cooked to order, Brioche French Toast with Bourbon Pecans and Bourbon Maple Syrup, Biscuits and Gravy and Sway’s Signature Benedict, with House Made Biscuits, Fried Chicken, Infused Collard Greens, Poached Cage Free Eggs and Hollandaise.

Signature drinks include tableside shaken sweet tea enhanced by fresh fruit smash flavoring, 16 beer taps, including craft beers from local Kentucky breweries, and of course, an array of bourbon, including bourbon cocktails, paired with fresh fruit juices that make unique drinks allowing all audiences to enjoy Kentucky’s best bourbon.

Overseeing the kitchen at Sway is Hyatt Regency Louisville’s Executive Chef David Barrett. Chef Barrett has connected with some of the most recognized farms in the Louisville area to bring the highest quality cheese, fish, poultry and meat to his kitchen. Sway’s purveyors include, among others, Kenny’s Farmhouse Cheese of Austin, KY, Marksbury Farm of Lancaster, KY and Chaney’s Dairy Barn from Bowling Green, KY. Sway is a participant in the Kentucky Proud Program, bringing fresh fruits and vegetables to their tables daily from farms across the Louisville area.

Sway is the final touch of Hyatt Regency Louisville’s $5.8 million transformation, which has updated the hotel’s entrance, guest check-in, Atrium Lobby and Stay Fit at Hyatt gym. Sway seats 97 guests in the restaurant and is open Monday through Friday for breakfast from 6:30 a.m. until 11 a.m.; lunch from 11 a.m. until 2 p.m.; and dinner from 5 p.m. until 10 p.m. On Saturdays and Sundays, Sway is open for breakfast from 7 a.m. until 12 p.m.; lunch from 12 p.m. until 2 p.m.; and for dinner from 5 p.m. until 10 p.m. The bar area, seating 54 guests, is open Sunday through Thursday from 11 a.m. until 12 a.m., and on Friday and Saturdays from 11 a.m. until 2 a.m.

I like the concept, hopefully the execution and quality is there. Something about advertising a cobb salad in the press release just doesn't get my juices flowing. And I like cobb salads, they're just not very interesting.. But it is a hotel.
Love the commitment to local, I hope it's a real commitment and not just PR fluff to drive some business.
Could potentially be a nice addition to downtown, if the people at the top keep their hands off of it and don't try to screw around with the food.

I'm certainly glad to see some of the major hotel restaurants picking up farm to table type dining. I'm not sure that this sounds that exciting based on the menu selections they mention in the press release. Most of them sound like either typical restaurant menu items with the name expanded to include catch phrases or just typical Southern Foods. I'd be much more impressed if they were going to be much more creative like many of the other new local dining experiences are!

He would think they would at least change the name from city to city! It now falls deeply into the chain category and even worse if a chain within a chain so to speak. Anticipation of its opening is certainly deteriorating rapidly!

I guess I'm confused. If the chain is buying local farm goods to prepare their food are they really more evil then the local diner that buys all their stuff from Sysco?

How are these things adjudicated?
