Good story. Shockingly enough, that's exactly how I feel about my brothers and sisters who slave in kitchens.

I was thinking this story might find some resonance here. I worked as a janitor and at a car wash (even during winter!), so I know something about how the author feels.

Fantastic essay. I found this to be true as a waiter as well. I worked with people who had PhDs, fantastic musicians, artists- really interesting people. Not what most people outside of the restaurant business think of waiters.
