Share Your Favorite Super Bowl Munch-Mates

by Steve P » Sun Jan 22, 2012 9:54 pm

I loves me some football and I LOVES me a good Coney dog...Here's the recipe for one of my favorite Super Bowl dishes. Anyone else have any "Super" Super Bowl dishes they'd care to share.

Steve’s Coney Sauce

2 pounds Ground Beef (I prefer Kroger/Angus/Ground Round)
1 small can tomato paste
1 large Onion (diced/small)
3 tbsp minced garlic (the jarred kind works just fine)
½ tsp of salt (or be adventurous and use Cajun or other seasoning)

Add first 5 ingredients to large skillet, brown ground beef (approx 10 min), and remove from heat, drain fat, transfer to medium sauce pan and return to low heat.

Add these ingredients:

4 Tablespoons mild Chili Powder (I prefer Penzy’s Chili Con Carne seasoning)
3 Tablespoons Yellow Mustard
2 Tablespoons Worcestershire Sauce
2 Tablespoons White Vinegar
1 Tablespoon Sugar
½ tsp black pepper
½ tsp of dried Cumin (or to taste)
1 bottle Heinz Chili Sauce (Substitute Ketchup in a pinch)
One can American Lager (Bud Light, etc) note: Do NOT use a hoppy and/or dark beer.
Additional salt to taste (I start with ½ tsp and work my way up from there)

Simmer uncovered over low heat, stirring occasionally, for at least two hours (yes, two hours). Add more beer if necessary to retain consistency.

The final step (and it’s up to you when during the process you do this) is to run a submersible (“boat motor”) mixer through the Coney sauce for a minute or so (or you can let mixture cool and transfer to a Food processor). Coney Sauce should be relatively smooth NOT “chunky”.

Serve on a bun with your favorite hot dogs along with diced onion, cheese, etc, etc

Sticking with tradition, I always fix potato skins as my mom made them every year for the Super Bowl while I was growing up. Add some slow smoked brisket and multiple forms of alcohol and I am good to go.

Anyone who loves football should hate the Super Bowl.

Dude, the Super Bowl -is- America...I mean a game of football combined with two weeks worth of cheap pageantry and commercial excess. What's not to love ? Besides all of that, some of us use the holiday (yes, holiday) as an excuse to make up some really cool and interesting food. Anyone else got any great/interesting/fun Super Bowl recipes ?

I have nothing constructive to add at this time, but please allow me to take this opportunity to say

"Go Giants!"

Watching this team come together through adversity and emerge a strong team has been a joy.

Very reminiscent of Super Bown 42, in that sense. I only hope the results are similar.

That is all.

I guess I can see Matthew's point. Superbowls tend to be blowouts for some reason. This has been one of the best playoffs ever though, so maybe the Superbowl will live up to its billing this year.

I'm thinking about making this monster.

Was that his point? I thought he was just being vague and snarky(not that that isn't his right)

The last 4 Superbowls have been competitive, with 3 being downright exciting almost start to finish.

Plus, Superbowl 42, possibly the greatest Superbowl of all time.(sorry)

OK...I'll go again. Then it's your turn. How about a "kicked up" Sloppy Joe ? How about a Sloppy Giuseppe ? (and yeah-yeah...I DO know they make -pizza- in the UK called "Sloppy Giuseppe" but this is A'mur-ica dammit and we're talking REAL football).

Note: Recipe is flexible...use more or less ground meat as necessary, keeping all proportions more or less the same.

3 pounds (1 pound each - Ground round, bulk Italian sausage and ground Veal) Can't find ground Veal ? No problem, just use equal amounts of ground round and Italian sausage.

1 Large Onion - diced small
1 Green Bell Pepper - diced small
1 Red Bell Pepper - diced small
3 Tablespoons Tomato Paste
1 Tablespoon Italian Seasoning (or just use Oregano/Basil...whatever)
1 TEAspoon Garlic powder

Add meat and 6 ingredients to skillet on medium heat. Cook, stirring frequently, until (a) meat is brown and most of fat is rendered and (b) Peppers are starting to become clear/soft...about 10-12 minutes.

Remove from heat, drain well. Transfer to slow cooker.

Add: Equal parts (approx. one can each or until reaching desired consistency) Hunts regular "Manwich" and prepared Pizza sauce of your choice. Pasta sauce can also be substituted for the pizza sauce.

Recommended but optional - or to taste:

1 Can of "Petite" diced tomatos
1 Tsp Black Pepper
1 Tsp (or to taste) Italian seasoning or Oregano/Basil (it won't take much)
1 TsP Minced garlic (or substitute 1/4 TsP Garlic powder
1 Tsp Crushed red pepper

Cook on Medium in slow cooker for at least two hours (for sausage to become tender and not chewy).

Justin...Nicccce, I like the way you roll...Actually most folks call that a "Pork Phatty" and I've made more than a few over the years (a staple of the BBQ circuit). You can find several You-Tube videos demonstrating the technique. One thing to note, there are as many variations of this as there are folks who make them...(Pizza Phatty anyone ?) As an example, I like to use corn beef hash and a few other ingredients for a "brunch" version of this. Also, I don't know that I'd cook my internal bacon quite that crisp before rolling it up. One final tip, you will be SO much happier if you pop the sausage into the freezer for about 30 minutes to "firm up" before rolling...same with the bacon weave. Trust me.

I like football. I don't like the other stuff (halftime show, commercials, extra pomp and circumstance, etc.) I don't like that the commercials are extra long, as is the halftime show. I don't like how non-football fans at parties make comments about football when they are a johnny-come-lately to the football party (no pun intended). Given that all the other stuff is made out to be more important than the game itself, I, in turn, don't like the Super Bowl.

If I actually like football - which I actually do - why would I subject myself to the Super Bowl?

What moves us to love must be quite different. The Super Bowl just gives me a headache, and I don't love headaches.

BUT, recipes are awesome, so keep them coming.

I get what you're saying, Matthew, and agree to an extent. However, the food, booze, and football will always win me over. And a few years ago, I almost lost my cool at a Superbowl party when a group of my girlfriend's friends were rooting for the Patriots because "Tom Brady's sooo Hot"

And I wouldn't be so obnoxious if the Giants weren't playing.

I don't get involved in the chain/local, craft/megabrew, democrat/republican, homosexual/chicken debates, but my emotions run high around football.

I'm not usually a Giants fan (unless they are playing the Cowgurls)...but having grown up in Canton Ohio...AND having had 2 members of the Cleveland Browns as me pee-wee football coaches (Sam Houston and Bill Glass)...AND loathing only former Browns owner and Ratbird turncoat Art Modell worse than (former Browns coach) Bill Belichick...I am therefore for this game and this game only a HUGE Giants fan. :D Did ya'll follow that
