also, under Michael Paley, Proof was doing some dishes that were based on very authentic Italian preparations, just susbtituting Kentucky ingredients much like Mario Batali is doing at Babbo and Lupa in NYC. But, now that Chef Paley is gone, I am not sure how the menu will change.

Ron got it in one: Primo. Chef Michael Hargrove is a serious student of Italian regional cuisines, and they're also serious about making their all-Italian wine list match.

That being said, Dallas McGarity was doing similar work at Volare, and there's no reason to think Josh hasn't kept it up over there. I had a bucatini all'Amatriciana over there that could have come straight from Abruzzo.

This assumes that you really mean authentic Italian regional cuisine, not Italian-American immigrant cuisine, which our town does well, but it's not the same thing.

I also stand corrected on Proof on Main. I don't who told me that Chef Paley was leaving to go to another restaurant for Myriad, but they gave me some bogus information.

Paley is still there and he is a serious student of real Italian cuisine, especially Tuscan style dishes.
