Here's a list of the top restaurant trends for 2012 as compiled by the American Culinary Federation: The American Culinary Federation’s top 20 for 2012. Interestingly many of them are already happening in Louisville!

My favorite is #17..."Non-Traditional Fish". Basically I read this to mean: We've-more-or-less-exhausted-the-worlds-supply-of-fish-you-recognize-so-we-will-start-serving-you-Carp-and-call-it-Kentucky-Tuna.

OK, correct me if I'm wrong, but aren't all the better places in town ALREADY doing most of these? Especially with local products, ice cream, and booze?
