fluffy omelet

I am craving a fluffy ham and cheese omelet, but I don't want to make one. Do any restaurants have fluffy omelets? Most of the ones I can think of seem to have thin omelets wrapped around the filling.

Ellen, I am not sure where to buy a fluffy omelet here in Louisville, but The Camilla Grill in New Orleans used to make the best fluffy omelets & they would mix their eggs in a blender to whip a lot of air into the liquid, which resulted in a very fluffy omelet.

You might want to give that a try, or see if Waffle House can satisfy your craving. I think they whip their eggs in a blender. Good luck.

Another thought would be to go to one of the many good breakfast places around, from Meridian Cafe to Wild Eggs or Lynn's, and see if the chef is up to the challenge of making an omelet styled to your liking. A lot of chefs - particularly the indies - might be inspired by a challenge, and the worst thing that could happen will be that you get an omelet that's flat but good. :)

It has been awhile since I had their omlette, but I remember Cafe Beignet's being fluffy...and good.

You can make a great fluffy omelet by whisking together two eggs and then putting them in an isi whipper (whipped cream canister), charge it twice, foam into a seasoned skillet over medium heat, and season with deserved seasoning and ingredients. It's like a souffle in texture. Great for egg whites as well. 2-3 eggs will make two large fluffy omelets.

Waffle House usually has fluffy omelets! :)
I personally love Waffle House. Scattered, smothered, covered and chunked!
