It's awfully quiet around here, I see a lot of "views" in the list but not too many "replies"

Three reasons: (1) Because most of us "pot stirrers" are on self imposed sabbaticals (2) Other interesting personalities are on Food Dad suspension...and (3) When it comes to thumb-on-the-pulse-of-the-food-scene...The place just isn't as cutting edge as it once was. :? Just MHO.

I was wondering about that. It seemed some of the latest attempts at pot stirring were quite lame indeed. Example..."As farmers markets thrive, so do concerns (MSNBC)" I mean really...thats just pitiful.

Actually I thought some of recent discussions on here were pretty interesting. The recent thread about the use of the word "natural", Marshas piece about "wearing the whites", the Shawn Vest craft brewery service thread and of course the 20 page chik fillet thread. LHB seems to be running quite nicely at the moment.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

I must say some of heated debates over the past few months have gotten for me to be offensive & I end up walking away shaking my head, wondering why so many people around here are hell bent on attacking others. It's pretty obvious there are some people who strongly dislike others.

I have said many times I get more "foodie" satisfaction by swapping recipes with old ladies than I do here on this forum ... not all the time, but often times. It also irks me to see how every independent place gets rave reviews by many when often times the food & service are not good, maybe a little bit of tunnel vision on that issue.

Some folks will build a cross just to bear it.
Some folks will walk around with a pointy stick just to poke at anything that moves.
Some folks will state their case with eloquence and debate said case with wit and finesse.
Some folks genuinely enjoy the fellowship and community of our local f&b scene and realize how lucky we are to have it.

...but this is the world wide intrawebz and we all know how that story goes

This should help ...

I fixed the best bbq ribs last night ... I boiled them first in the crockpot for several hours, then finished them in the oven with my favorite Kraft BBQ sauce. They were cooked just right, falling off the bone I tell you. I served them as an appetizer with chilled Coors light before moving on to the main course of Papa John's pepperoni pizza. :lol: :lol: :lol: :lol: :lol:

(Dislaimer: I hope this cynicism and lack of serousness in this post is obvious)

I am still brainstorming ideas for business so I have nothing to report. Yet.. 8)

However, I do believe I have mastered making pan gravy for roasted chicken or any other meat. (Sear, roast in oven, remove chicken, deglaze with white wine, add stock, reduce, add butter, then parsley. WHAM.)

:? ....Ehhhhhhhh, not the best choice of words. Sorry, let me try this again.

Cutting Edge. As recently as two or three years ago, this was the only place for foodies...now it seems like there are any number of websites/blogs, etc where one can seek out local food-dom. For example, I will be the first to admit that when choosing a new place to dine, I now depend on Urban-spoon reviews a helluva lot more than I do what people say on Hotbytes. Not a knock on HB...HB is just as cutting edge as it has always been, it's just that there are other options out there.

As for "stirring the pot"... :? ...well personally I enjoy some/most of the banter. This pizza, that beer, your BBQ sucks, no it doesn't, yes it does, ok your a dickweed...Personally, I think a lot of people read this forum just for that kinda stuff...and they probably do it for the same reason that folks watch some of these goofy-as-sh** TV shows.

Anyway, it's a good thing this forum has the kind of Food Dad it does, lest none of us would have a place to play. Thanks Food Dad.
