Salsify-Had it?

We just had the opportunity to stay out at Shaker Village for a few days . . . really enjoyed being able to eat there the whole time . . . and our first day there, the casserole of the day was a Salsify casserole. I can't describe the taste accurately, but it was wonderful; rich, almost meaty, really nice.

Apparently salsify is one of those vegetables that didn't make the transition over to industrial farming in the 19th century. It's a smallish root vegetable (carrot-like) and has to be hand-planted. Oh, and it's also known as the oyster-root or oyster plant.

Anybody have experience with this tasty little delicacy?

My grandmother grew "oyster plant" in her garden. The dish that I remember her serving she called "Scalloped Oyster Plant." I googled but could not find a recipe that seemed to produce that right product.

Yes, but I have only had it at Shaker Village. lol I've never found it any where else.

Did you have the lemon pie while there? THIN THIN sliced whole lemons.......yummy

Years and years ago I got salsify at Holiday Manor Kroger, but that was in like the '80s. Still, there's precedent for it. :) Try calls to Kroger, Burger's, Whole Foods?

It's funny . . . they had canned salsify for sale out there . . . from Belgium! I may just have to go out again to get my fix (or go into the wilds of the Internet in search of the canned stuff).
And yes, Trisha, I had the lemon pie! wow.
And easily the best fried chicken I've had in ages (Buttermilk soaked. yum)
And grilled scallops that were perfection . . .
