Luigi gave me a job when I needed one. I learned alot about Italian
cooking that to me was better than any school. He's a true professional
and the spinach pizza is the best anywhere!

I grew up right outside NYC and Luigi the first person that I have encountered who creates a pizza much like what one would have in New York. I'm not sure that sharing the recipes will produce the same results. Some people just have an instinct for seasoning that transcends a recipe.

I think that the water has a lot to do with how a pizza or bagel recipe will turn out, outside NYC. NYC water.... the best in the world! imho

What is the deal with an egg in the center of the pizza? I believe that's traditional in Italy(?). I had the egg as a "sunny-side up" version and liked it. But, when we were served a pie in Rome, it came as a hard-boiled egg, which wasn't nearly as good. I thought maybe they served it hard boiled to the 'Merkuns.

A recipe, or the identification of ingredients and how to put them together to create something is a statment of fact - it can't be copyrighted. A cookbook, however, is a unique collaboration of recipes, pictures, tips, etc. in a certain order and manner that is expressive of the author's own efforts. As such, a cookbook can be copyrighted. But, you would be hard pressed to sue someone over cookbook infringement - they would basically have to make an exact replica of your layout.

Jay, there is no egg at the center of this DiFara pie, that's just some fresh mozzarella. But, the egg on the pizza is a common thing in Italy.

I really didn't mean to come across as difficult here. I just wanted to be sure that it was ok to share such info. To be honest I had long forgotten about this thread until it popped up out of nowhere over the weekend. I do not have the recipes with me today, but I will get them and try to post them this week! Again, I am sorry if I came across as being difficult.
