Hello Folks! This is my first post. I have been here reading (lurking) for a long time and thought I would go ahead and register to post. I am a sushi LOVER! I was out west a few months ago and a co worker said he had to take me to this hole in the wall sushi place. True to his word it was outstanding. I had never heard of Hamachi Kama. It was the most tender, most delicious piece of food I had ever tasted. Fast forward back home here to Louisville. The wife and I like to try different local sushi places. I began asking the sushi chefs if they have Hamachi Kama. To my surprise most of them (except 1 place) didnt have it. Most didnt even know what it was! We found one place that had it on the menu. (I was told you have to ask for it as most places dont list it on the menu). Now...the place that had it listed was a chain! How many of you know what it is? Do you know where it can be ordered regularly? Let me say that I love our local sushi places, they routinely serve up some delicious food. Maybe this Hamachi Kama thing is sort of a secret??

Welcome to the forum, Tony!

Hamachi Kama is the "collar", or sub-cheek cut of yellowtail tuna (not to be confused with yellowfin). I've never had it, but it sounds delicious!

I'm also a big fan of the dish. Maido does a very solid version, and Tokyo on Lime Kiln serves my personal favorite.

I had it for the first time at Wild Ginger on Bardstown Rd. and thought it was delicious. Have had it several times since then and still think the same.

Beat me to it. I've had it multiple times at Wild Ginger as well. Consistently good. After the first time I had it, I couldn't stop thinking about it.

You're right, it seems like it may be sort of a "hidden gem" - but to know it is to love it.

I've had Kama Toro at Emperor of China in the past. Incredible stuff. Fatty Tuna from the Blue fin collar.
