Steve P is Da man

Last night at Cooking at the Cottage, the Forum's own Steve P and his lovely bride Becky (aka The Rolling Bones) wowed a full house with his class "The Art of Low and Slow BBQ". Steve very professionally covered all areas of smoking techniques, sauces, sides and equipment with the results being fantastic brisket, ribs, pork sliders, Steve's "Kicked up Beans", two types of slaw and a dynamite macaroni salad. I might also add that Steve started the class off with some grilled chicken with a white barbeque sauce and some smoked sweet Italian sausage. Needless to say everyone left full and a little better educated.
Thanks Steve and Becky it was absolutely fantastic
Unlike most of you, I am not a nut, but I do roast em.

:oops: ....Awwwwwwwww shucks. The pleasure was all ours. We had an absolute blast and are looking forward to a reprise of "BBQ-101" (time/date TBD). Also, if anyone is interested, we're going to do a class on "Tailgating" sometime in Sept...THAT should be a real blast as well. Details coming soon on the Cooking at the Cottage website.

Wish we were still in the area to get to one of those classes! I'm sure it was a lot of fun and know Tim would have learned a lot.

Tim made some ribs over the weekend you'd have been proud of! He wanted me to pass on his thanks for you giving him some tips and showing him the ropes. They were his best so far! He thinks he's ready to start tinkering with his own rub now that he's starting to get the cooking part down. 8)

Like Mark said, it was a full house...I think we were plating for 39 people but a far as I know there were only three forumites in attendance; Gayle Dem, Bill Veneman and Amy B.K.

BTW, for anyone who hasn't been to a class at Cooking at the Cottage, it is an absolute jewel of a place whether you are the instructor or the instructee. I encourage everyone to keep an eye on their website for upcoming cooking classes of all kinds. Their "Date Night" classes are especially popular.

:lol: ....I can laugh about it now that it's over but you have NO idea how worried I was going into this thing that I was going to screw up and overcook the ribs (FOTB). I don't know that I could have shown my face in food-dom again had that happened. :P Luckily everything turn out fairly well though, the only major faux pas being that I misplaced my glasses early in the evening and as a result of not being able to see up close ended up cutting some of the Brisket -with- the grain as opposed to across.

It was a terrific evening - Steve and Becky did a great job and whether you were a novice or more experienced, you left with tons of information, suggestions and stuffed to the gills! I will echo Steve's comments about the experience at Cooking at the Cottage. It is perfectly set up for cooking classes and very comfortable. Mark, Linda and their daughter were consummate hosts. I have been to 2 classes and look forward to a return visit soon.

We're going to work on some dates next week...Either Mark or Linda or myself will post something. I must say Becky and I were pretty stunned (and flattered) at the response. When we hatched this thing I kinda had in my minds eye that there might be a dozen people who would be interested, as it turned out it was SRO and Cooking at the Cottage had to turn some people away...
