Anthony Lamas won first place in the Monterey Bay Aquarium Cooking for Solutions 2011 Sustainable Seafood Challenge. :D

Still in Cali and still doing some culinary adventures! I will share details when allowed!
As far as the Monterey Bay Aquarium event "Cooking for Solutions" it was amazing!!!
Rick Moonen, Chris Cosentino, Sam Choy, Alton Brown, Virginia Willis, and John Ash were just a few of the great Chefs involved as well. I was 1 of 4 Chefs that competed in the "Sustainable Seafood Challenge" Bravo's "Top Chef" superstars Bryan Voltaggio, Carla Hall, Casey Thompson and I had an hour to create a dish or two for all 3 judges!
No idea what our secret ingredient was until right then!
1 hour goes by quick! Especially with the commentary, answering questions,winds of the ocean, and playing with the seagulls! But in the end we took the #1 award "Flavor & Spice" award!!!
It was quite exciting, especially with my mom and sisters in the crowd.
Judges said my dish was Amazing!
Wild Alaskan Salmon Tiradito- pineapple ginger salsa, sesame, yuzu-soy foam, micro cilantro
Oak Grilled Wild Salmon- forest mushrooms, English peas, broccoli rabe, toasted pinenuts, coconut-red chile glaze. We represented Louisville well! My Seviche at the gala was a hit too!
