Most of them are pretty good points however I really don't agree with #7 in all cases and definitely don't agree with #9. Most people can't tell for themselves whether an ingredient is critical to the integrity of the dish, if not I certainly don't think of anything wrong with the asking for something to be left off. As for desserts many times by the time you get to that course you just really don't want that much more food. In such case I believe it's better philosophically and definitely for your budget if you only order one desert to share instead of buying two and not finishing either one!

Definitely have to agree though that #10 is the most important in every case.

can number 11 be sharing how amazing your experience is with the staff and management when you do have a great time? I know highlighting "number 10" is what this thread could possibly turn into - but I know of about 50 restaurants in the greater Louisville area that really would like to hear how amazing they are this weekend. Great weekend for the forum to show some moral support for the tireless hours people have devoted to the derby festival and showing the rest of the country why Louisville is a great food town. It’s really the only reason I logged in at 3:15am Oaks night ....from what I’ve been hearing from my guests, the city is really hitting on all cylinders this weekend.

I have to agree with Jayson regarding showing appreciation for the restauranteurs in Louisville. After working with them a great deal during the last 2 weeks, I really appreciate how hard they work to make sure that everything is perfect for this exceptional time. Unfortunately, many times their efforts go unrewarded or even unmentioned.

But whenever I have guests from out of town and we dine out, it is remarkable how much they applaud the great restaurant enviroment that we have in Louisville. On vacation a few weeks ago in Napa, I talked to a director of the Culinary Institute of America in New York, and she remarked how notable and energetic the culinary scene in Louisville has become.

So let's give a shout out to the chefs, restaurant owners, bartenders, waitstaff, and all employees at our restaurants that make us a notable stop on the culinary scene. Especially this weekend, having the Derby and Mother's Day literally back-to-back.

I'm sure Dave included them in the chefs reference. Their work is most essential.
