I've been hit with a terrible craving for a ham and swiss or turkey croissant. Where I'm from there was a french bakery that made them daily. I went to The Bakery and they had almond and chocolate (which was good) but I'm looking for savory instead of sweet.
I'd love to learn how to make them but talents as a baker are really limited to pizza and pretzel dough.
Blue Dog Bakery has excellent French-style croissants. I understand they don't make them on premises, but they're still the closest thing to the original I've found around Louisville. You'll have to supply your own ham and swiss.
You might be able to find them at Dalat's Gateaux and Cafe. They had a booth at Worldfest and they had some really good savory pastries. I haven't been to the actual cafe but from what I had at Worldfest I would feel comfortable recommending them. Does anyone have any firsthand knowledge? The pictures on the link I posted below make it look pretty nice. Here is there address and phone number also so you could call them to see if they have the savory croissants.
I wonder if you could get a croissant sandwich at Ermin's Bakery & Cafe? Although their menu doesn't show a savory croissant sandwich, they have both savory fillings...and croissants. I bet they'd make you one to order if asked.

The tomato basil empanda is equally as delicious...
It does sort of have the same texture as would a stuffed croissant.

The place that used to be in El Paso was a Vie de France bakery. It was in an IGA and it was wonderful. You could pick up a savory croissant and eat it while you did your grocery shopping.
I just made a half batch of croissants to get the feel for it and saved the other half of dough for "toying" with.
The latter came out...excellent! Split between chocolate...the other ham and cheese. Ham and cheese...soooo easy. I have no idea why you can not get these in town.
