ROLLED OYSTERS..."FLABBY S".....IS IT GONE??

by Jim Greenbrier » Wed Dec 01, 2010 8:21 pm

A panic has set in as I recently heard. the restaurant Flabby s has gone the way of Mazzonis...GONE !!!
This would mean the premier rolled oyster is no longer available !!!!! CAN ANY ONE VERIFY THIS??

If it is true I d appreciate alternate suggestions...These I know, but in my opinion are not the same quality as Mazzonis:

Kingfish, Checks,

Eating oysters on Christmas Eve has been a life long tradition in our family... I d not like to see it end...

Thank you in advance,

Jim Greenbrier

Gone since July, sadly. And with it dies the historic rolled oyster recipe, a Mazzoni family secret since the 1860s. Other places offer a rolled oyster, but there's none like it. It's as dead as, well, Ehrmann's ice cream.

Interesting.

A rolled oyster is a baseball-sized seafood dish that is found only in and around Louisville, Kentucky. It consists of three raw oysters dipped in an egg-milk cornmeal batter called pastinga, rolled in cracker crumbs (hence the name), and deep fried. They were first served by Italian immigrant Phillip Mazzoni and his brothers in the late 19th century as a free giveaway to their saloon patrons with a purchased beer or whiskey. It is unknown if rolled oysters were actually invented by the Mazzonis, or if the recipe was brought with them from Italy. During prohibition, Mazzoni's remained open by selling these oysters in their new restaurant and it became a popular food item all over town. Today, most seafood restaurants and fish fries in the Louisville area will have their own version of these on their menus.[1]

Given how folks are so adept these days at reinventing the (food) wheel, I can't believe there isn't anyone out there who couldn't offer up a "new and improved version" of this masterpiece (and it -was- a masterpiece).

Steve, you'd sure think so, but I can only testify that I've been eating Mazzoni's rolled oysters since the 1960s (!) and have tasted most of the imitators without seeing anybody - even some excellent seafood spots - come very close.

While I don't eat rolled oysters, but my old man and my brother love them. They always claimed that Moore's oysters where always the runner-up. I would imagine that they are no longer around either.

Mike Linnigs version of rolled oysters are very good. It might be tough to get them for Christmas though. They close down during winter.

I actually tried a gussied up version with country ham as an appetizer while I was at Equus. I thought they were good but they were a festering turd as a menu item. I think I might have sold 10 orders in the month it was on.
It was really hard to sell something other than Crab Cakes and Mushroom Fume'.

It is amazing how many dishes have been created in Louisville. From these Rolled Oyster, which I have never heard of, to Derby Pie and Hot Browns. Am I missing something? I can't think of anything that Seattle has created. I mean it is known for coffee and salmon but nobody really created those dishes.

Putting macaroni in chili is pretty much a Louisville thing as well. I think it stems from frugal people trying to stretch out their meals. I've never seen it anywhere else. I had a friend from New England come to meet his fiance's parents who live here and he thought it was quite odd that his mother-in-law-to-be put macaroni in her chili. But then again, he had never heard of Biscuits and Gravy either.

The recipe is still out there. It would be nice if the folks who have the recipe would be willing to share it with an establishment that has the means and motive to duplicate it.

Yup, just look at the number of obese people as you stroll around town. Since moving to this area 18 months ago, I am continually "impressed" by the number of fat people here.
