vacuum pot coffee now availabe at Derby City Espresso

by Matthew Landan » Thu Aug 09, 2007 9:39 am

I'm excited to offer another method of coffee preparation at DCE - the vacuum pot!

This is a classic from the last century not seen in action much any longer.

From Wikipedia:
The Napier Vacuum Machine, invented in 1840, was an early example of this type. While generally excessively complex for everyday use, vacuum devices were prized for producing a clear brew, and were actually quite popular up until the middle of the twentieth century.

The principle of a vacuum brewer was to heat water in a lower vessel until expansion forced the contents through a narrow tube into an upper vessel containing ground coffee. When the lower vessel was empty and sufficient brewing time had elapsed, the heat was removed and the resulting vacuum would draw the brewed coffee back through a strainer into the lower chamber, from which it could be decanted. The Bauhaus interpretation of this device can be seen in Gerhard Marcks’ Sintrax coffee maker of 1925.

I use the same Bodum vac-pot, in the first video link, at home. I love it and is always a hit with the kids.

We use the same vacuum Bodum pot as well!! It makes for a conversation piece at parties as well as providing a great cup of joe. Does anyone else with this pot have to use a TON of coffee to get even semi strong brew? I rock Jackson's Organic in mine (best coffee in town).

DCE is also using the Bodum Santos vacuum pot.

We also have them for sale here for $50

When making coffee using this method I use 3 tablespoons (about 20 grams) of finely ground coffee to each 16oz of water in the pot. To put that in perspective it's about the same amount of coffee for a triple shot of espresso.
