We'll be cooking up an alternative Thanksgiving Dinner, based on
a meal that I had with my Italian Travel Group at the Cappezzano Villa and Winery
A luscious poin loin roast seasoned with rosemary and garlic is roasted, then topped with a reduction of pan sauces, grapes and wine.
We'll enhance the roast with pumpkin risotto and finish the meal with pears poached in red wine.

Back in the States for tonight's class, we'll fix a number of traditional American Thanksgiving dishes, updated for the times. Make and dine on corn pudding, smashed sweet potatoes with goat cheese and chipotle chilies, and cranberry relish. As an added treat, we'll be making the perfect cloverleaf roll.
