Man, I just ate at Maido Essential Japanese. It was lovely and I loved the happy hour. Having said that, my main course is what I would like to showcase here as it was quite literally the best kept fish secret in louisville and quite mind blowing.

2 words: Hamachi Kama.

Holy omfg crap. This is the collar of Yellowtail. Loaded with meat, yet not suitable for sushi. You need to work a bit for this one, dig in between some big bones, avoid a fin or two, but if you do, you are in for one of Louisville's sweetest, richest, most decadent AND inexpensive ($8.50!!?) fish dishes. There must've been a pound of meat here. I'm seriously so blown away. Incredible.

They also do a damn fine version at Osaka, just up the road.

I so LOVE everything at Maido, but haven't heard of this dish, thanks for the head's up- guess I'll be making a trip there soon:)
