Corbetts (X rated version)

Since I'm not a food critic I won't give a nosh by nosh accounting of the food. It was all wonderfully tasty. What impressed me was the experience as a whole. So...

There were 7 of us in our party. Our reservations were at 8:30 so that we wouldn't have to rush after a full day at the tack. Even though the restaurant was packed out we were seated as soon as we arrived (on time) at the restaurant. This was my first time at Corbetts and right away I fell in love with the various, tiny dining rooms. We were seated downstairs in a charming, rustic, stonewalled room that had only 2 other tables in it. Even though those tables were full with chatty excited diners the room didn't feel loud or "dinish". Caesar (our table's captain) was at the table right away for drink orders and/or the ready wine list. No New Amsterdam gin for me (which I thought might be the case) but I had given Caesar free range to bring me a substitute, as long as it's an interesting substitute. He brought me Hendricks gin which would have been my second choice anyway so score one for Caesar's intuition.

The meal itself came in a series of stages with service flowing easily from one to the next with no stumbles, hitches or flaws of any sort. Servers were more like attentive ghosts rather than intrusive characters. We started with smallish tastes with the courses gradually getting a bit more sizable as we preceded through the salad, the bread offering, the fish entree and eventually the beef entree. It was like a night of great sex that starts out with little flirtatious pats, the knowledgeable, attentive lover judiciously pacing himself and ending an hour or so later with all involved totally sated saying "I just don't think I can take anymore." The dessert of bourbon ice cream and a chocolate cake-like morsel at the end was like a final convincing kiss making sure everyone was happy. Everyone was.

Afterwards we all exchanged phone numbers and promised to do it again sometime. I'm betting we do.
Yeah so thanks to Corbetts and their great staff. They made us all feel special and "pretty"! :wink:

I really like the "servers were more like attentive ghosts". ~That is a great way to describe what I think a lot of people want.

This is the standard that Michelin demands of three-star restaurants in France, and if you've ever experienced it, it's amazing. A server is always there the instant you need something - often just before you realized that you needed it - yet they are completely non-intrusive. It's almost as if everything you need appears by magic.

It's hard to imagine achieving this level of service in the US, and a lot of excellent places fail because they master the art of Being There but miss the principle of Not Letting Their Presence Show. Without a professional restaurant service community or a national criteron that carries the weight that Michelin does in France, there really is no strong incentive to meet this service standard. Unless you have the rare restaurateur like Dean who can envision it and inspire staff to reach it.
