COALS ARTISAN PIZZA "LOUISVILLE'S FIRST"

Hello to everyone. This is Chef Michael formally from the Seafood Connection in St. Matthews and I am very excited to be back in St. Matthews and to announce that in December I will open as the Leading Chef of Louisville's FIRST COAL OVEN FIRED ARTISAN PIZZA. The owners of this brand new concept have definitely done there due diligence, Mark and Madeline Peters. Among there experience comes over 20,000 miles traveled around the USA and Europe tasting the best pizza (Motorino's, Frannie's, Pizzeria Bianco, Mozza, among so many others) and wanting to bring that quality and taste to the city of Louisville. We will be testing our menu in late November for the opening in December and will definitely welcome everyone to come out check out our oven and let us know what you think.
This forum is open to everyone to ask as many questions as you want Mark, Madeline and myself will do our best to answer all of your questions.
We look forward to seeing and hearing from everyone.

We are located in the Vogue Center very close to the new kitchen store "Cooking At The Cottage" and directly across from Annabel's Rugs. We have a facebook that we are updating regularly. You can find us under "Coals Artisan Pizza". We are looking forward to meeting you all. Louisville is a great food town and we want to be part of this incredible community!

No... We are a family business consisting of my husband Mark, and my sister-in-law, Ginny. We would be introducing this concept to the Louisville market.

From the thread it appears Tony will also be opening a coal oven pizzeria. We wish Tony the best and consider him a great business man and a worthy competitor. I do think there is room for all us and we welcome anyone who can help bring this type of pizza to Louisville.

I am very excited to try the pizza. I'm just surprised that no one is having a hissy-fit over burning coal. If its good pizza I dont care if they burn tires for fuel but then again Im not on the global warming train.
