Our client Tony Palombino is opening a new concept featuring artisan pizza and baking it in a coal fired pizza oven, in the process of site selection, more details to come.

I wonder how much different it will really be than Boombazz? Obviously the coal fired oven will be different but they already have quite a few pizzas that I would consider artisan. Any idea what part of town he is considering?

A huge difference than what everyone around these parts knows about pie!
For one thing; coal burns a lot hotter than wood or natural gas.
And that's all I have to say about that!

Is there a place in town burning wood? All I've seen is gas hearths...been looking for a wood burning place ever since my honeymoon in Rome.

Primo - and Allo Spiedo before it - used wood, and with outstanding effect. I wonder what ever happened to the wood oven built into Primo and whether the next eatery there (from the 211 Clover folks, isn't it?) will take advantage of it. In my opinion, they'd be nuts not, to, but what do I know?

Additional concept for the "ville", Coal Fired Pizza, interesting location coming soon, we think.
Might make pizza dining interesting within the Matt.

So many varied choices. It's a good thang.
