Isn't that Coco Tran (Zen Garden, Zen Teahouse)? I think we talked about her plans for a vegetarian and tofu restaurant there a few months back. She was the original owner and founder of Cafe Mimosa.

As you’ll recall Broken Sidewalk reported back in January that Coco Tran was planning to take over the old Eggroll Machine/Cafe Mimosa location. Since that time serious progress has been made and I can’t wait for the end results.

Why? The building is going to have two restaurant/retail spaces on the first floor

Will the place make it? I dont think there are enough people to support a full blown vegetarian restaurant. although I dont keep up with the non meat restaurant scene.

The same owner has two vegetarian restaurants on Frankfort Avenue, and of that pair, Zen Garden has been thriving for six or eight years or so.

Like I said. I like meat with my meals so I didnt know. Best of luck on any venture that may add to our great dining scene, plus new jobs and more cash in the economy. I guess when I think about it I do go meatless once in awhile. Mostly pasta and a good sauce.

I think Robin hits the point well here. Vegetarian dishes that are well-thought and prepared have an across-the-board appeal. In addition, the plethora of places throughout town that do offer good vegetarian options do it not just to be nice, but because people order them. My verdict: not only will they do well, but we'll be seeing more of these types of restaurants than less down the line.
