There are an awful lot of vegetarians, and the Highlands/Germantown/Crescent Hill/Clifton neighborhoods have quite a few of 'em, plus a larger group (including me!) who will happily dive into a good, interesting meatless dish for a change of pace or just because. As I said, Coco does well enough with Zen Garden that she opened Zen Tea House two doors down, so she must be on to something.
