They have the best queso I've ever had. Don't know what's different about it, but mmmm.

I've tried many a thing on their menu, but I always go back to their quesadillas. They have 8-10 different varieties on the menu to choose from.

The tacos, burritos and tortas rock. Try any of the specials when they start doing them again.

Tacos, Chile Rellenos, and their salsas. The salsa is not what you would expect, think pureed salsa served out of squeeze bottles.

Forgot the salsa. I like a mix of the green mokeamole and the dark brown smoky one.

Empapalados (Chef's Pride and it takes extra time to cook, big enough to share - fraggin delishy), cream of cilantro soup, and a $3 ceviche tostada.

Had the quesadilla mixta and the queso app. Girlfriend got the baja quesadilla. Both were too much to finish. The quesadilla was delicious. Crispy, buttery crust on the tortilla and the stuffing didn't fall all over the place. It was nice. I liked the old, smaller spot better though. The new place is HUGE.

Adam, I went to La Rosita's last night as well. I agree with your assessment. The place is HUGE. I like the atmosphere of the old location but I very much liked not having to wait last night. My wife and I both love the Mayan Quesadilla. Chicken, Black Beans, Avocado, Plantains, and cheese. It is a perfect balance of sweet and savory. Rather than both of us order the same dish I almost always venture out and try something different (knowing that I will get at least a bite of hers  ). I have yet to have anything I like as well. The fish tacos are really good but I do not like the fried potatoes that come with.

Apparently the basement is a just as big and eventually will be a dining room also.
