BBQ Chicken

by JasonW » Thu Jul 19, 2007 10:20 pm

I am having a cook out this weekend for my family and I am going to grill lots of boneless chicken breasts. I usually just use store bought BBQ sauce and may add some cinnamon, sugar, etc. in it. I need some suggestions on a good sauce to use on the chicken. Maybe even some of the chicken BBQ and some another flavor. Please help or it is gonna be another cook out same taste.

You could try a nice rub, Marinade or brine before grilling to add extra flavor. Any bottled Italian dressing is a nice place to start. Leave over night in the fridge and rub off before grilling or your flames will be out of control due to the oil factor. I also like the Mcormick brand of seasonings Particuarly the Montreal Chicken, but use sparingly because they can be a little salty

AGREED! I forgot about Montreal Chicken....Mmmm will have to get some for myself.

You could also make lemon chicken or curry chicken (don't have the recipes though).

Chef Howertons Rubs

by Deb Hall » Fri Jul 20, 2007 4:27 pm

Local Chef Chris Howerton now has his own line of prepared foods and the Lemon Chile Rub would be a great "something different" to do with half of your chicken breasts, and then use BBQ sauce for the rest. It comes in a decent size jar and you can get it at a number of the places that carry local prepared foods: I'm guessing Pauls, Dolls and Liquor Barn will have it. Or you can order it from his site at http://www.chefhowertons.com

And no, I have no connection to Chris- except that we carried the Lemon Chile Rub and the Smoky Steak Rub at our store, and Brian & I think they are outstanding general rubs.

Make this and use it ... Grill the chicken as usual, about 10 minutes before it's done, dip them in this and then use the rest to baste them.

Louisiana Baste

1/2 Cup Light molasses, 1/2 Cup cider Vinegar, 1/2 Cup prepared yellow mustard, 1/4 Worcestershire Sauce. 2 Tsp Cayenne pepper hot sauce, 2 caps Hickory smoke ... mix it up with a whisk or a fork.

Sometimes I'll make it up without the molasses and use it as a marinade, then finish it with a regular batch, also works good on wings

Pappy's White Lightnin' is awsome and made by my buddy Shane Best. Shane is a winner for the Rib cook off in Reno among other awards and his sauces are great. You can get them at Kroger.

Moonshine madness is ver hot but the White Lightnin is perfect.

I want to thank you all for mentioning my products. Yes the lemon chile is what we use here at Club Grotto for all seafood and chicken dishes. AS far as BBQ sauce goes, heres a great one to look for Derby City Sauces. I used this particular BBQ for a rehearsal dinner and it was outstanding. Im not a big BBQ'n kind a guy so thats why I chose to use DCS
