Mark, it's going to be Chuy's, a highly regarded Tex-Mex chain out of Austin, I think.

Yes, it will be Chuy's-Tex Mex out of Austin , TX! Hiring should begin end of August, early Sept with an early October Opening. Will keep you posted! :D :D

My cousin and her husband are both from Austin. They were VERY excited to see a Chuy's going in. Apparently, the food is spicy, and fantastic. I can't wait!

I had a chance to eat at the Chuy's on Westheimer in Houston several times in 2006. I recall they served 3 different salsa's with the chips, and the food was very good compared to other tex-mex chains that I have been to. None of their stuff is ground breaking or innovative, but they do it very well. The one in Houston was packed with a wait almost every night of the week.

I remember eating at Chuy's in Austin back in the '90s and being impressed. I just hope that as they grow into a chain they don't start pulling back on the flavor to meet perceived Midwestern tastes.
