Chop Shop Salads open in St. Matthews

I stopped by the new Chop Shop location in St. Matthews today and they were finally open. It's on Breckenridge Lane in the first block south of Shelbyville Road, next to China 1 restaurant. The space looks slightly larger than the downtown location, with a few more tables, but the St. Matthews hours are a lot better: 11 a.m. to 8 p.m., seven days a week.

Dammit!!! I try too avoid chains, but this one... It's like the Whole Foods prepared and constructable food on ecstasy that will probably pull me over on a hungry day.

A fine point. It's locally owned and this is the second property. It certainly appears that the owners are developing it as a "fast-casual concept" in the hope that it will develop into a chain.

OOPS! That's awesome to know. I got it mixed up with another place that I've been to in Chicago (can't remember the name, but I think it's a similar concept and has the word "Chop" in the title?).

Sorry for my confusion. Even MORE reason to go there!

For anyone who's interested here is their website: Chop Shop. It certainly looks like you are better off picking one of their combinations, it looks like it could get expensive in a hurry making up your own combination.

I'm having a hard time finding the name of the chain that does chopped salads near Millenium Park. Anyone know? A couple blocks behind and to the (I think) East of The Blackstone / Mercat?

After a quick google search - I found Chopt, but they only report to have locations in NY and DC. Maybe the one in Chicago went out of business?

Regardless, I love the concept. I had one the best salads I've EVER had anywhere from there, and with the best service in the market. I would expect the locations here to be comparable.

DD#2 and I stopped in the other day. I asked them if they had tofu, and the one fellow said they weren't able to find a way to make it work and did I have any suggestions. I thought that was nice that they welcome feedback. Anyway, I had the Acapulco Pool Boy salad with shrimp and cilantro lime dressing. The dressing didn't have muck kick, but they didn't overdo it. I can't remember which one my daughter ordered, but we really liked both. The ingredients are super fresh and since they make it right in front of you, I suppose you could 'tailor make' your salad. I felt much better about eating here as opposed to salad bars where people cough, flies venture in, etc. It's worth a few extra cents. The only downside is the parking, and there is precious little in that area. I know I'll be there again and soon.
