As the first sous chef at Equus ... three years I believe.. I am a little bit miffed about not being included in this pantheon of culinary royalty. But we've been so busy at the Shady lately, I don't think I muster the energy to help out. Sounds like a great time. Just remember.. It was Dean and I alone in the kitchen in those early days, Desserts, Apps, Entrees, Sauces, Every single item bore our signature, and some major partying mixed in.. all from our four hands. I am proud of being part of that foundation, and all that I learned from Deano, and maybe a few things he learned from me. Dean is one hell of a nice guy, and put up with a lot with me.. we rocked the house. Good memories. And good luck in the future.

Forgive me Bill...I just clean forgot, I kind of went back a bit..please no offense, truth be told there are multiple chefs that came thru there and were not represented here, the most glaring being David Cuntz who was the executive chef for 12 years. He now resides in Colorado and was just here for a guest chef at Corbett's a couple of weeks ago.
I'm afraid my brain may be partially pickled after 25 years in this business, please know that you are welcome to participate and I shall include you from this point forward if you desire..just let me know.
Those were some wild times the first 2 or 3 years, we were the dynamic duo back then sans the capes! All the best my friend!
