Dinner tonight at Equus to see how Dallas is doing as he takes over the kitchen. He is still working on the new menu so I had the evening special: wild Paciffic salmon on a bed of ratatouille topped with leek crisps and dusted with curry. Divine! I can tell that I will be eating there frequently.

It was correct. Simply put, Sometimes the shoe fits, sometimes not-so-much so.
I'm personally even more excited for Dallas with this position because Dean has a reputation as being one of the best bosses one can work for. Not to mention the whole career of exceptional cuisine and dedication to the community aspect.
