Nice Michael Ruhlman article featuring Jay Denham

Apparently Chef Denham is going into the salumi business. Anybody heard anything as to if this will be a locally produced product? 'Cause that would be freaking awesome.

Chef Denham used to do some small scale charcuterie at Park Place so this move doesn't surprise me. Who doesn't love some cured meat products.
