Where do you get good tri tip in Louisville?

by Chris Lindy » Sun Jun 20, 2010 10:01 pm

I tried searching for a topic on this, but I think tri tip by its limited letters won't come up in search results.

I went out to LA last week and ate at a bar-b-q joint that offered tri tip. Needless to say, I'd like to have this dish again. Does anyone in or around Louisville prepare tri tip?

You and me both!! I have family in Ventura, CA - first time I ever had (or even heard of!) tri-tip was about 7 yrs ago. Every time we visit they bbq tri-tip because they know how much we love it!

Once I saw an ad at at Kingsley meats for "marinated sirloin tip triangles" so I had to check it out. It was tri-tip, but marinated in Dales  , of which I'm NOT a fan! Needless to say we were disapponted.

Do what I did - buy plain "sirloin tip triangles" and marinate them yourself - then grill them to to your liking (medium rare for me!) Slice thin and serve :D deeelish!

Karem's, on Wallace, has a Triangle (trademarked) steak.

I believe that Karem's has moved out to Norton Commons. I don't think they are on Wallace anymore.

I'm wondering how someone can "trademark" a cut of beef.

I do remember now that they moved.

If I remember corectly, they had a trademark on the name and some sort of local patent on the cut. The owner gave me a lengthy explanation on it about 6 years ago, but I can't recall the specifics. I remember it being very salty, but very good.

Salty? That would not coincide with the tri tip I had. Just very tender with a sweet, tangy marinade/sauce.

ND, how do you marinade your tri tip? I wouldn't even begin to have an idea on how to prepare a tri tip marinade. If I were trying to match the one I had at Wood Ranch, it would need to be akin to a light bar-b-q sauce.

Chris, I make absolutely no testimony whatsoever about the quality or the virtues of chains v. independents, BUT I got an email from Famous Dave's announcing their newest menu item -- Santa Maria Sirloin Tri-Tip.

You can make your own assessment of the usefulness of this information after viewing:

Its called Santa Maria tri tip. Its the go to bar b que at any Ca. Central Valley gathering or social event. Having family in Clovis Ca. I've had it quite often and its remarkably easy and cheap. The cut of meat you are looking for is a sirloin roast or triangle roast 2 to 4 pounds. You can almost always find it at Kroger. Its rubbed with garlic powder, pepper and other spices. Just google "Santa Maria Tri Tip" and you will find 100's of recipies . The traditional sides are salsa, pinto beans mac& cheese & a few bottles of red wine. I have made it here a few times and it has drawn only raves. Frankly I consider the Karem's tri tip way too salty and way, way too over priced. Did you try it at a place called tahoe joe's ? I recently heard they, a small Ca. chain, were having money problems. It would be nice to know if they were still around. Otherwise its In&Out only on my next visit.

Ah, tri tip. Years ago, I worked at a radio station in Sonora, CA. One of the things I did for the station was high school sports. Every Friday night in the fall, I'd broadcast the Sonora Wildcats games. While the team was very good, the highlight for me was the trip tip sandwhich at the home games. I'd get there very early with my broadcast partner so we could get the prep work out of the way to enjoy a sandwhich before the game. Thanks for bringing back that memory, Chris. Looks like I'll have to go buy some triangle at Kroger and try not to damage it too badly. :)

I marinate it depending on my sides - you can use a teriyaki for asian, southwest citrus (my fave!), fresh cracked pepper and crushed garlic for good ol' american, a good italian dipping oil w/ basil for italian, whatever you like. Sometimes I just use Montreal Steak for a rub. You can serve bbq sauce on the side, or whatever sauce you like.

I was at Sam's yesterday and bought one for $4.87 lb - peppercorn seasoned. I'll let you know how it was tomorrow!

On the buying at Kroger suggestions, which Kroger(s) are you guys talking about? Mine (McMahan) says they've never heard of it! Meijer will have it once in a while...

I have nothing to compare it to but we went to Famous Dave's tonight for dinner. We had the Tri-Tip. Gotta admit it was delicious! If you're interested in trying this, you have to hurry because it will only be offered until the end of the weekend. My husband had the tri-tip sandwich, which came on some really nice bread; sort of like a ciabatta, but not as crunchy on the outside; nice and soft on the interior.
