What does Louisville need?

After scrolling through dozens of restaurant listings reminding myself of all the different categories of restaurants we enjoy here, I'm left to wonder what we are missing that can be found else where. I haven't done a great deal of traveling in the last year so I have no idea what new markets are developing in the way of dining experiences. What would you like to see out there (in the way of a restaurant) that is missing in Louisville?

I'd like to see a Brazilian steakhouse. I've been to the chain Texas de Brazil in Las Vegas, but if someone wants to open a locally owned place that would be awesome.

I would like to see upscale/creative Indian and/or Mediterranean, like Devi and Mamlouk in NYC

also, more fresh seafood, with lots of variety and fresh, whole fish properly prepared

An authentic wine bar that only sells wine, artisan cheeses and chocolates. Like the wine bar Eno in chicago.

My vote goes for a real Greek restaurant. Of course, a real Jewish deli wouldn't hurt either.

How about a 24 hour Greek/American diner something like this: Stax Omega ?

Actually the idea of a Brazilian or Argentinian steakhouse also sounds pretty good.
