Frankly, that's the kind of question that would probably bring a trained <I>itamae</i> over the top of the sushi bar, brandishing his sharpest knife and yelling. Seems to me like an idea that would pretty much do violence to the idea of sushi.
But maybe a health-food place that sells sushi, like Rainbow Blossom?

I'm also not sure if brown rice can be used in anything but a roll type Sushi since it normally doesn't stick together like " sticky rice" that is used for Sushi. Besides Sushi wouldn't be Sushi without the sticky rice.
I also agree with Robin's comment about the Itamae coming over the counter with sharp knives.

Amazing Grace on Bardstown Road has sushi made with brown rice, and everytime I have been there when the sushi chefs were there they offer to make anything I want.

I too, have had the brown rice sushi at Amazing Grace.
They made an amazing sushi platter for my daughter's 16th birthday.
You should also know that August Moon will substitute brown rice for white on entrees ($1 charge)...well worth it.

Whole Foods has sushi made with brown rice...I had some last night. My favorite so far is the brown rice tuna roll.
The Simply Thai Sushi and the Amazing Grace sushi are one and the same.... Simply T makes the sushi and (I believe soups) for AG. Both are delish.
Meanwhile, Believe it or not... the Kroger on 22 across from the Summit has some of the best Sushi around, and when the "Chef" is there he will make it fresh, and also has at least one or two Brown rice choices at the ready!
