This is the lesson of the master to the student, which I hope to share with you...

Jim often talked about 'the culinary journey'- the life process by which everyone who enjoys food and beverage undertakes.

He stressed that 'who knows?' where it will lead you...

He also pointed out, repeatedly, that as long as it makes you happy, it's right.

He was adamant that the duty of the older generation is to share thier life experiences with the next generation. That to share one's knoweledge was better than to 'ifItellyou-illhavetokillyou.'

(I kinda stretched that writing technique, sorry)

At the end of the day, these are the lessons that this student believes- the things (among many) that I know to be true. And what makes me look back fondly on my time with Pai Mei, and continue talking about him and his approach.
