Certainly an interesting concept, looking at the restaurant it's very high end anyway with the minimum fixed price dinner being $140 and the maximum being $195. Kind of like having early bird specials to extend the dining hours to accommodate more turnovers. Depending on the actual price differences it may be very advantages to some restaurants.

I put vegetables in your desserts, white chocolate with your fish and other nonsense stuff that you think shouldn't make sense, but coax the nonsense into something that makes complete sense in your mouth. Just open your mind, mouth and eat.

You're confusing the prices of Next Restaurant (the upcoming place the article is about) with Alinea.

Check the link above that I posted.

from the FAQ section:
