Varanese Wild Horse Wine Dinner

I just wanted to give accolades to Chef John and his entire staff for an outstanding wine dinner last night at the restaurant. I believe it was sold out, but everything went smoothly, from the wine pours, the remarkable service, to the Kentucky proud fare that accompanied the wines from Wild Horse.

A peek at the menu;

1st COURSE
Local Bourbon Barrel Smoke Pork served over a Sweet Potato Biscuit with a Green Apple Butter
Served with Chardonnay

2nd COURSE
Grilled Kentucky Prawns with Roasted Corn Butter Sauce Served over Havarti and Country Ham Grits
Served with Unbridled Chardonnay

INTERMEZZO
Mint Granita

3rd COURSE
Morel Mushroom soup with Goat Cheese Croutons and Garlic Chives Drizzled with White Truffle Oil
Served with Pinot Noir

4th COURSE
Hazelnut Fried Ravioli Filled with Chicken, Brie Cheese and Apples Topped with Dried Cherry Bourbon Glaze
Served with Unbridled Pinot Noir

5th COURSE
Grilled Local Buffalo Ribeye Steak Served with Roasted Potattoes Topped with a Kentucky Chow-Chow Garnished with Popcorn Shoots
Served with Cabernet Sauvignon

6th COURSE
Strawberry and Rhubarb Pie with Bourbon Ice Cream
Served with Merlot

At $65 a person for 6 courses with wine, it was an excellant value and an great dining experience.

Oooh...

That bourbon barrel pork recipe is here with some reaction shots (it almost looks like my eyes pop outta my head, rofl.) It really is that good!
