I've found that they usually do not get there until the late evening on Thursday and Friday and not until at least 2:30 pm on the weekends.
The next time I will start a new post and tell Pat perhaps they can post if they are not planning to be there since more often than not they keep to their schedule. I know that frigid cold and/or wind keeps them from setting up. Yesterday was pretty windy and I didn't see them out there. I've found also that if you buy a couple extra gorditas, wrap them up in foil and then re-heat them on a paper towel in the wave they are almost as good and keep for a few days.

Hi folks, Let me take a moment to introduce ourselves. My name is Pat Costas, and my wife is Esperanza. She is a great cook by the way which is how we ended up doing what we do now. We started very small, (hot dog cart style). Within a year the demand for more hispanic food promted us to get a trailer which would allow us to prepare more different versions of Mexican foods. We never really expected to become as busy as we have become thanks to you our customers.

From the posts I have read on here I would like to address the concerns which have been posted. I myself would much rather eat at a place which is clean. Thus the reason for needing a health department license. In order to have a mobile food service license we do have to meet certain criteria very similar to a restaurant. We are required to be fully self contained, which we are. In other words we need to be able to cook, clean and sanitize everything in the trailer itself. We have all the equipment to do so. The last thing in the world we want is for someone to become sick because of our food. We do everything we can to ensure that will not happen.

Also, when are we there? We are open Fridays by 6:00 PM, Saturdays by 5:00 PM, Sundays By 3:00 PM and now Mondays by 6:00 PM. Closing time is 11:00 PM or when customers stop coming, whichever is later. We have been known to be there until 1 in the morning. Hey if people are still hungry may as well feed them right?

Also in regards to Gorditas and no lettuce or tomatoe. A gordita typically is served with beans, meat and cheese. However, if a customer wants lettuce, tomato, cilantro or pico de gallo on their gordita, we are happy to oblige. Just let us know. We are here to accomodate. I know when I eat somewhere I may have special preferences and undertand other people do too.

Pat, welcome to the board. It certainly sounds like you and your wife are running an above the board operation and that you all are serving some delicious Mexican food. I hope to stop by the trailer soon...best of luck.

From Sarita's praises and other board members' experiences, the gorditas everyone is raving about seem to be the item of choice. Could you please elaborate on the other items that you offer...meat choices, etc.?

Thanks Derrick, We offer soft tacos, each taco is made with 2 corn tortillas, the meat of choice, cilantro and grilled onions. The tacos are also available with a flour tortilla which is a little larger so therefore an additional $.50 charge. The gorditas turned into a much bigger item than expected. They are hand made using a mexican flour. Gorditas typically are filled with beans and meat, but we can put lettuce tomatoe or pico de gallo in them if requested. They are available with the meat of choice. Quesadillas are made either with corn or flour tortillas. A normal quesadilla is just tortilla with melted cheese. However, most people prefer to add their meat of choice. A corn tortilla quesadilla is made with 2 tortillas with the meat and cheese sandwiched between. The flour is made with one tortilla folded over the meat and cheese. We also have burritos, with meat, cheese, lettuce, tomatoe, and sour cream. Another popular item is the torta which is made with a mexican roll. The roll is toasted with mayonaisse, then we put beans, meat of choice, cheese, lettuce tomato, sour cream and jalapeno peppers. Sopes are similar to a gordita, however they are deep fried and we put beans, meat, cheese, lettuce tomato, avocado, and sour cream on top.

Then we have your choice of meats. Asada, which is basically thin cut beef skirt steak. Cecina is another thin cut steak a little drier and seasoned a bit differently. Carnitas is a fried pork. Lengua is beef tongue. Pastor is a marinated pork. Chicharones are pork rinds cooked in red salsa. Desebrada which is shredded beef cooked with mild poblano peppers, tomato and onion. Chorizo is a Mexican sausage.

We also serve elotes or esquites. It is corn served in a cup. At the bottom we put a little mayonaise, butter, sour cream and parmesan cheese, then the corn and top it off again with more mayo, butter, sour cream, and if so desired chili with lemon juice. Very popular amongst the hispanic community. The two different names are only because certain parts of Mexico know it as elotes other parts esquites.

Al carbon is a thin cut steak cooked over charcoal. It is different than cecina. We don't offer al carbon because we don't do any charcoal cooking.

My friend Dale and I ventured out this evening to Las Gorditas and had the best Mexican food I've eaten in a very long time. Only one table so we ate on the hood of my car, I had an asada taco and an asada sopes. I don't believe I've ever had a sopes before, it reminded me texturally of an Eggo..not sweet though and it was delicious, just a little crunchy. Dale had a carnitas gordita which he said was incredibly good, and a torta, a huge sandwich which really should be ordered alone, it is a meal unto itself. I also tried the elotes and now have a new favorite treat, corn lovers take note, this stuff is really really good with the chili sauce, so good I had to get one to bring home. A coke and a diet coke brought the total to $21. More food than we should have eaten and big big smiles on our faces. As we were in line to order we turned and who did we see but Robin and Mary! This place is going to get stupid busy very soon I am sure, and for very good reason. I picked up a card with their hours Friday 6-11:30, Saturday 2-11:30, Sunday 2-11 and Monday 6-11. We also got some prices from Pat, a Taco is $1.50, Gordita $2.50, Torta $5.00, Elotes $3.00, Sopes $3.00 and Quesadilla $3.00. Cash only and worth every penny you will spend! And for those concerned about street food the place looked spotless. We are going back tomorrow... :D

I agree with you on all counts. It was our second visit to Las Gorditas, and it's a real Mexico City-style experience at amazingly affordable prices, with authentic Mexican street food that I would rank right up there with Louisville's best taquerias; and the family that runs it is just as nice as can be. For those wary of language-barrier issues, relax. Pat is a native of Los Angeles and Esperanza is from Big D. You'll need no Spanish-English dictionary to order or have anything explained to you.

All I wish is that they could have set this up a little closer to ME! :D

I brought part of mine home, too. It's a BIG portion! That green-can Parmeejun worries me a little, but somehow in this dish, It works.

Ventured out to Watterson Trail and Bardstown Road tonight for some Mexican food. The tent was up and there was a steady stream of folks having a good time.

My wife and I had the tortas with asada. Really nice....that and a coke and I was set. What a great way to spend 30 minutes on a nice evening!
