Ok, so pulled, marinated pork that goes in tacos is generally pork butt. Lots of fat there. It will sit in a steam table throughout service. Now Lord forbid someone forgets to keep the water refreshed in the well. It happens. Then the water evaporates out of the pork itself, coming into direct contact with heat.

It's a simple fix- just add water and stir. Tada! The spices and lipids have only intensified- they don't evaporate.

This isn't competition BBQ, they probably aren't using a smoker for this. It's a braised application.

Sound about right?

It's not an overgeneralization, sadly. While I doubt you'd find one to go on-record for fear of retribution,you'll probably find a lot of dirty-little-secrets kept by women in the restaurant industry, especially the ones in the back of the house. A bunch of crap punctuated by a little bit of, "Whoops I meant no harm by it, why did you take it that way, why are people so PC all the time," from men who can afford to say this type of crap and will be protected by others when they say it.

I'm talking about this forum, Peg. I took your original post as suggesting that sexism is out of control here. Trust me, I'm not interested in facilitating that.

I don't want to add more to this topic, but just to clarify, I'll lay claim to being dismayed but not to saying you are one of the creepy ones. PS - In the "review" the author did far more dishonor to herself than to your business. She should have a lucrative future if she switches to AM talk radio.
