I don't remember them having Proscuitto in them, but that has been a few years ago. Maybe they could leave it out for you.

The menu says they are made with pancetta risotto.

We went last night and were quite pleased. The decor is sleek and contemporary, and certainly not that of your typical "pizza joint." We shared the arancini, wedge salad, and Brownsboro pizza, and for simplicity I'll just echo what everyone else has posted - they were all excellent. Coal's pizza rivals Papalino's and a few of the Boombozz special pizzas as our favorites. Service from Aaron was attentive and friendly.

I only have two small nits. First, and along the lines of what Gary posted above, our pizza could have used another minute or so in the oven. The outside 3/4 of the crust was perfect, but the inside 1/4 was just a little underdone. When you picked it up, the end drooped just a little and the toppings slid off. Still, it was an outstanding pizza, and I'm sure cooking pizza in that much heat can be a guessing game sometimes.

Second, the bourbon selection could use a little work and please, never, ever, list Jack Daniels on your list of bourbons. Jack Daniels is Tennessee sour mash whiskey, never to be mentioned in the same breath as good Kentucky bourbon.

Otherwise, we loved it, and will be back often. My wife said "I could see us here every Thursday."

I went to Coal's last night with a friend for the first time. We ordered the Highlands but received the wrong pizza, I can't remember which one they brought but it was the one with all the mushrooms. They were very apologetic and quickly took it away after we pointed out the error. We got our correct pie within five minutes which I thought was pretty quick. I gotta say the crust and sauce are unrivaled in this city however I will echo many others' posts about the inner 3rd of the pizza crust being underdone; the toppings did slide off unless you started each slice with a fork despite the fact that 1/2 of the crust's edges were closer to black than golden brown, which I liked. We also had the arancini which was also excellent.

All in all I thought the food we tried was very good and the rest of the menu looked intriguing, and despite getting the wrong pizza at first the service was good as well. Hopefully they can figure out how to fully cook the crust, Once they do I'll have a new favorite Louisville pizza.

They are changing flour next week....Going from 11% protein to 16%. All concerned feel this will solve any issues with the soft inner crust. Personally, I happy with it just the way it is...but if they can improve on an already excellent product, it can't be a bad thing.
