I would love for Louisville to acquire a restaurant with a focus on Molecular Gastronomy, similar to Moto in Chicago.

There are going to be alot of changes to the interior. We worked on the plans last night and we were very happy. Now it is just a matter of permits and construction. I think you will be plesently surprised.

Actually, now that I think about it, a French bistro, a Jewish deli, real Greek, some street food, a nice diner, and all the other suggestions sound good! :D

What happened to the French Bistro that was going in on Wallace Ave. in the old Karem's?

More restaurant options not in the Highlands or Frankfort Avenue. And before anyone takes offense, I simply mean different restaurants in other locations ; NOT that I do not like the Highlands or Frankfort Avenue. People are spread out more these days in Louisville and it would be nice to see different options come to their side of town.

And not around Brownsboro RD/West Port RD.

There are other areas to set up shop.

I agree, but would it really work? The cluster of chain restaurants in the suburban perimeter (not to mention the Wal-Mart on Hurstbourne) is just part of the Balkanization of the Greater Louisville area—and people seem to like it that way. (Need evidence? Witness the incoming cars lacking spaces at Macaroni Grill/Chili's/Buca di Beppo any Saturday night.)

Sure, some non-chain restaurants survive—El Toro and the wonderful Shalimar—but I'm sure their packaging (in a strip mall near the chains) hasn't hurt in marketing themselves to the masses (if I may quote Bill Bryson) 'hoping to find some untried product that will tingle in their mouths and excite, however, briefly, their leaden taste buds.'

I believe it would work. Some of these places are over saturated with choices (corner of Taylorsville rd/ Hurstborne Lane -> Shelbyville rd.) while others have more than a handful to choose from in their dinning area. Take Fern Creek for example : Sake Blue, great place , and it's been doing well. But, what else is in the same area? Applebees; Moes; White Castles; Burger King; Outback ; Aspen Creek ; Moby Dick ; Waffle House...

Not exactly a culinary feast to choose from on a Saturday night. Or saturation has not begun to rise in the area. And, the population is well primed for more places to move in and take advantage of persons living in the area.

They are already building the Kohls; to be completed in September 2010.

The old Buckhead's location in Okolona is still for sale if anyone wants to take a shot at starting a local restaurant in an area that is ruled by chains. A McAllister's Deli just opened nearby & a Cheddar's is under construction.
