Name the day , chili-woman and I'll be there! :D

Some meat substitutes have egg white as a binder. You just have to read labels. DD is vegan and I'm able to adapt most recipes for her.

I'll second the Moosewood cookbook recipes. They are consistently excellent.

Bryan, my statement is merely a statement of fact. As far as local establishments, sushi, coffee shops, great restaurants the Highlands and Franfort Ave corridors are more progressive areas. I never said anything derogatory about the people. I don't live in a progressive area either. I'd say Fern Creek is not a progressive area either compared to Highlands/Crescent Hill.

So try reading a little and not getting so emotional over your incorrect perception of a statement before you call someone names.... :roll:

Chili Pot woman here. This is the coolest forum. I will admit that I've never been in any kind of chat room, never blogged, facebooked or anything like that.
When I mentioned vegetarian chili to my chef, boy his face lit up. He is up for any challenge and admitted that he had already been thinking about experimenting with it. Now, this guy really shys away from attention, but I like to give credit where credit is due. His name is Lucas Fleitz and I adore him. He has done spectacular things with our food and I know that it is due to his diligence that my customers are singing our praises. We still have a few kinks in the system, but he and I are learning together.
Thanks for the tip on the cookbook! That can be a jumping off place for us!

Just for another two cents, though I do live in the highlands, I'm at Fegenbush and Outer loop twice a week where my kiddo takes Karate (best place in town). So I often end up in the area of outer loop and preston (depending on plans and where I'm headed).

Lots of traffic, not just people who live right there. Even us lefty vegetarians are out there. And I bet quite a few live there too.

Nimbus, about that Karate place and it being the best in town, why is that so? My son takes Karate also, but I've the place you mention and it's close by where I live. Just curious if they have a reputation that I am unaware of, if so may need to check them out. Oh, and what's the name of the place?

The place is called Olympic Karate. Big Red sign, pretty close to that intersection. I think it is the best just from talking to a lot of people, and now I know from experience. Great head instructor. It is his life. I'll PM you with some more info - this is getting way way off topic. They let my big guy start just before his 4th birthday. He's 7 now, and loves it more than ever.

Oh, and I'm pretty sure they'll give you at least a two week free trial to check it out.

Back to chili. And our veg sidetrack. You could simply leave the meat out. Spices remain the same. Add extra beans (kidney, white, etc). The typical subs would be either tvp (chunks are best, available pretty cheap in bulk), or seitan. Seitan is expensive to buy prepared, but cheap to make yourself. However, who wants to add extra labor. So TVP is most common (texturized vegetable protein, not some horrible chem)...

Should be easy....

A friend constantly reminds me that there ain't no stinkin' beans in chili. If it has beans, it ain't chili. I'm sure he'd also say that if it doesn't have meat, it ain't chili. Call it sumthin' else, but it ain't chili, pardnah. :wink:
