We were fortunate enough to stumble there while in nyc two months ago.
Yes they were fantastic.
Yes it felt like several dozen well placed hits to the stomach.
Still worth it.

In Bourdain's Les Halles cookbook, he has a great, great recipe from the restaurant. I have made them many times now and it's really hard to believe they can be so good. The blanching is key, as well as the order and lengths of the two fry cycles.

I know they have really good fries but I saw this video a while back and it disturbed me. This video involves leaving various food out for weeks so not for the weak of stomach but check the fries out

While very interesting, the demonstration has lots of problems if you're actually going to use it to decide what and where you eat. Not the least of which is that the way food breaks down in your stomach is not even remotely close to the way food breaks down on it's own.
