BWA HAHAHAHAAAAAA!!! I think you mean "casserole."

I take we can all agree on that with the possible exception of Steve who I think really likes it. If I am going to eat an Italian casserole I personally would rather have lasagna!

I LOVE Chicago-style pizza.

And you say "casserole" like it's a bad thing.

As long as someone isn't trying to pass something other than tomato, pesto or garlic sauce off as proper for a pizza then it's ok by me.
I am the original Mike G, never mind the impostor.

I am kind of a big deal.

But I still don't view orange grease as a sign of quality. Not on pizza; not in cheap grocery-store ground beef

Okay, went to Boombozz this evening and ordered the NY big pie! Half with cheese, and the other half with pepperoni. It had a manageable sturdy crust, not heavy on the sauce, or the cheese, but just right.
There was definitely orange oil, on the lovely metal perforated tray that it came on, and on the bottom of the slices. It definitely dripped off the pizza when I held it vertically.

The crust was a little crispier than I would like, and when it got a little colder became a little cardboard like. Not saying that is a bad thing, but it is fact. I enjoyed it.

Now, the above statement came from Robin, and if Tony is reading these posts, I would like for him to give his expert opinion on the orange oil. I hope this thread burns!

Great, Now I get a PM from Gena Wagner who wants to sell me her Italian restaurant, she tells me it would be easy to convert to a pizza place. Then she should do it, don't ya think?

good grease

Good Greece. Let's all go for a gyro. I mean gyros.

Is that pronounced Jiy-Ro or Gear-Oh or Jeer-Oh ?

Actually, it is pronounced Yeeros. The Gamma sounds like a y when it is the first letter of a word, and like a regular G when it is elsewhere in a word. By the way in my opinion, orange grease is disgusting.

The pizza's that I knew in NJ were never cooked on a perforated tray. Right from the oven to the flimsy box, or a metal tray to the table.

Hey, if the space is too large for your pizza operation, I might be interested in leasing part of the space for my bagel operation. Get your NYC style pizza and your NYC style bagels in one stop.

Will, maybe you want to go and open the Come back Inn, and turn it into a pizza joint.

You have time don't you?

Heather, maybe you should dial down the obnoxiousness. There is a significant difference between "telling it like it is" and being a jerk.

I found your comment above (Come on, Will seems like one of the nicest people on the board...no need to take pot shots.), the fact that you shared a private message with a public board, and your tangent about your hard-working, pizza-buying, Thursday-bowling father pretty off-putting.

No one has attacked you, nor has anyone "attacked" NY pizza...tone it down.

It is evident by the variety of posts that true NY pizza can vary from person to person...blue collar, by-the-slice style, DiFarios and some of the "nicer" places, foldable crust, with orange grease or without. Just like everything else, the true definition of NY pizza is open to one's own personal interpretation...as long as it isn't a Wick's or Lou Malnatti's, but then it wouldn't be NY pizza.

Sorry if I've over-stepped my boundries, I just felt some posts in this thread were beginning to lack in the civility dept.
