Yes, welcome to the wonderful world of country clubs. Change usually is slow, but if you want the younger members at YOUR club to come out to eat you need to offer cutting edge items presented in an upscale way as well. The patio will be full soon and that is your test. Know this too; they will be gone by October and will not return except for special events until next Spring. Your younger members are demanding in that they want you to provide at a lower or almost no cost an experience equal to say Porcini, Varnese, The Patron, etc..

Yes, there is a HUGE generational gap at this club...Going into my third summer here and have many menu changes coming for the up coming pool season.

OMG! I totally forgot about this bottle of goodness. My grandmother would use a teaspoonful or so in her egg salad. I'll have to go get me a bottle and try it out in homemade chicken salad!

I LOVE chicken salad! Joe Davalo's has an awesome chicken salad sandwich - and it's $5.50, huge and comes with 2 cookies . Or you can half sandwich and half a salad.

Highlands Kroger has good chicken salad too (I hate to admit that lol).

Joe Davola's is very good. My favorite is Cafe Fleur de Lis, which uses the Sweet n Savory version with curry.

My chicken salad can beat up your chicken salad's dad. I make it occasionally for a lunch special at Cafe Lou Lou St. Matthews. I'll post in this thread next time we serve it. Shredded grilled chicken, celery, onion, mayo, red grapes, green apples, roasted walnuts, celery seed, cayenne, lemon juice, curry powder.

And Jackie, I'll just BRING you some, because I cannot let a challenge go unanswered.

Ooh, also: I think the Cafe's is just great, too. I myself LOVE chicken salads of all varieties.

Marsha, I would like to share my recipe for Chicken Salad. I roast a chicken stuffed with lemon, onion, and garlic plus salt and pepper the inside and out. For the salad I only use the inside stalks of celery plus leves, roasted pecans, and heavy whipped cream , 1-2 tbs mayo and 1 tbs Penzys Spice mix Sunny Paris salt and pepper to taste. The whipped cream makes for a rich smooth salad. I do not add grapes because I like more of a savory salad.
I used to cater for a church and they went crazy when I made this for them.

I LOVE the chicken salad at the Chili Pot in Okolona. It has a spiciness to it (don't know from what?) and is served on chewy, grilled sourdough bread.
