Oh-my-goodness. I am so excited! I used to live in California for a number of years and haven't been able to find good, authentic Mexican food here in Louisville. I live right in Lyndon so will make a trip there this week! Thanks for bringing this to our attention!

Of course they do, just as Las Gorditas does. I've talked with Juan, the owner, and have had a look inside the trailer. It's just like Las Gorditas, a serious cook in a serious kitchen that just happens to be inside a trailer.

You can't open a food-service operation to the public in Louisville without health inspections and permits. Same goes (for example) for those wagons at the State Fair. Frankly, I would place a lot more confidence in a well-run ethnic trailer than in some of the itinerant carnies at the Fair, but that's just me.

According to my last health inspector, those trailers at the Fair/Chowwagon, etc are inspected daily.

Juan,

Any feedback on your hours? Is there a reason you chose to have late hours? I would really love to be eating your taco at 5:00, waiting until 6:00 is a struggle.

for most of the people eat a taco its at night. i mean for mexicans we love eat tacos in taquerias
A taqueria is also a Cenaduria is a term used in Mexico to describe modest mom-and-pop restaurants (cena means supper or dinner in Spanish).
