Definately a smoked amber. I favorably recal the rausch beer from my BBC days but haven't stumbled upon it since. Sir Pierce, does it still rotate? Are there any suggestions for a comparable brand that I can buy locally?

I haven't brewed any smoked beers since I left that BBC. I defer to Mr. Baylor on all smoked beer recommendations, being one of his favorites. He generally has one on-tap @NABC from the Motherland of Rauch Bier, Bamberg, Germany.

Flanders Red and Oud Bruins are my favorites. Cask-aging and careful blending of the young and old beers make each example of these styles totally unique and truly impressive artistic endeavors. I love the sour, fruity, and woody flavors.

I also have a tremendous fondness for ESBs. There is something wonderful about the restrained and quaffable nature of beers such as Fuller's ESB. The balance struck between the malty sweetness and a strong, but not overwhelming, hop finish is as engaging to me as some of the more highly regarded and sought-after high gravity offerings these days (which I also love).

Sounds like I need to explore the beer world a little more. I haven't heard of most of these beers, but then I don't get out of the kitchen much. I like Samuel Adams lager, Killian's Red, or Amber Bock. Based on these beers, what would you recommend to someone wanting to try something different?

American-style ambers and German Oktoberfests would be logical next steps from Killian's and Amber Bock.

From Sammy, go to continental pilsner (Pilsner Urquell still perhaps the standard). The best microbrewed pilsner I've had is the Victory Prima Pils.

The name change came after a 15 year debate. It is a small change to the label only; used to read Altbier: German-style Amber ale, now says Amber: German-style Altbier. The entire packaged needed to be freshened up.

Coincidentally, the owner of Duck Rabbit, Paul Phillipon, has ties to the Louisville brewing scene. Paul was Pipkin Brewery's second brewer who came after Mitch Turner (Pipkin's first brewer) left to sell beer for Schlafly in St. Louis. We're just one big, happy, in-bred family!

Belgian Tripels most times.

Hopslam or Hoptimus for spicy Asian dishes.

This is about as tough as picking a favorite food style. So much depends on the what fits with the time and place. As long as the beer is well balanced I'm happy. Over the top styles tend too often to be just that - over the top. It seems that many of the extreme, genre-busting beers out there tend to lose sight of the fact that, ultimately, the beer needs to be drinkable.

With that in consideration, I would have to give a nod to a classic cask conditioned pale ale. Either English style or American. While it may not be the sexiest beer out there, something about the soft carbonation of cask beer and pronounced dry-hop aroma that speak to me every time. Its so quaffable and yet so satisfying. The best recent example would have been an Alpha King @ the Map Room in Chicago. Its been 4 or 5 months since I had it and I still can't shake it...

Then again, I just came off a period where all I wanted to drink were stouts. And another when it was all about Belgian Triples. And another when it was sour beers. And another that was barley wine. And another...

Aww. I really liked "Altbier" better, mainly because I ran it through a translator and learned that it meant "old beer." :D

Ah well...as long as it tastes the same!
