Finally made to Guaca Mole today for a late lunch. ¡Ay, caramba! We did the sampler bit: chips w/ three salsas, guacamole sampler, seviche sampler and at Deb Hall's suggestion (yes, she was there!) the smoked fish taquitos. We were so full with that that we never got around to ordering the poblanas. I think my favorties were the tomatillo salsa and the taquitos.

I will post a mor edetailed report later. It for now let me say this place is amazing. It doesn't live up to the hype, it surpasses it. We had 7 items counting kids meals and everything, even the chicken tenders were great. We can't wait to go back. So good to have Christina and Fernando back!

Ok, here's the report. We were greeted warmly by Christina like we were old friends. She is amazing. Makes you feel right at home. I think she is one of the best front of house people in the city! So warm and gracious. As for the food, it was amazing. We had the smoked fish tacos which were great. Very unexpected but very good. My 2 year old son ate three of them! The kids also loved the quest fundido which was the best version I have had. The tortillas are so good! then there were the duck flautas. Go eat them now! So fantastic. Great flavors. My wife had the fish tacos and raved. Had one bite. Great taste and the batter was fantastic. Went with carnitas and the only thing I'll add is that I will never eat them at el nopal again. Amazing! Only regret is we had no room for dessert. We will be back. It was an amazing meal that did not disappoint! So glad thy are back!

Took the family for my daughter's birthday (8). My mom is in her 80's with the appetite of a bird and I couldn't believe how much she ate. She had the salmon and proclaimed it the "best" she's ever had. She cleaned her plate. The guacamole trio is absolutely wonderful. I had the fish tacos- could only eat 1.5, but they heated up nicely for brunch today. The entire group loved the place and food, which is quite a feat there. I also agree that given the portions, quality and presentation the prices are outstanding. The only negative we experienced was slow service. When our food arrived, the waiter didn't come to check the order. We also ran out of drinks and water before dessert and he didn't come back to take care of that. Odd. When you are serving spicy foods, it's important that the water stays filled! I remember having at least 6 cucumber waters in Seviche one night!

I can't wait to return. As soon as the first review hits the Courier or LEO you will have to wait forever or show up at 5:30 I predict. It was near capacity last night. I also like the bar, it's spacious and friendly and no doubt will attract many locals. This place is a real winner!

I meant we had a group of 8, my daughter was 22. I also forgot to mention that they brought her a delicios chocolate cake that was very light- more like cocoa. The table split 2 bread puddings which were delicious.

I'm planning to wait a bit in order to review them after they've hit their stride. I know Fernando and Christina are running a pro operation from Day One, but things still change as those little details get worked out.

The CJ long had a pretty strict policy about giving a new place a month or two before doing a review, but I've noticed that recently if a place has a buzz, they tend to jump in and do a review more quickly than in the past, even if the review includes nitpicks that seem to reflect opening-period issues. I guess this is okay, since the CJ so rarely does negative reviews; but trashing a new place would be wrong. But anyway, as far as HotBytes and our print partners are concerned, I'm going to give this one a little while.

Well, I opened the paper today and I see that the s*** has hit the fan! In a good way for them, but boy they'll be busy. I liked Marty's review, I'm already craving the guac trio again.

Well, it's hard to tell with the CJ these days. Sometimes a review will push a crowd, sometimes it doesn't seem to make much difference. In any case, I certainly wish Guaca-Mole well. And I'll get to it in due course, but will probably hold off for a while now.

OK, the guys on the Green are planning a celebratory dinner at Guaca Mole Monday evening and can't wait. All the raves and accolades I am sure are well deserved knowing Fernando et al involved.

Oh, and for those who are a bit nosey (you know who you are) we are celebrating me getting a new job and starting Tuesday.....so I will be imbibbing lightly.....

I think that's a very good idea here.

My wife and I have tried twice now to go for lunch. The first time was on a Saturday a week or so ago (actually around 2:30), and there were no cars and the door was locked. We went again yesterday, checked on their website first (said they were open from something like 11am-10pm), arrived at 3:00, and the doors were locked with a sign out from that said, "sorry - closed".

Lots of people inside eating, but we couldn't get in and began to feel very "unloved"!

Andrew, they posted on facebook that they got slammed after the review and the staff needed a break. I guess they are refueling for Derby week!

Just had a wonderful lunch there today.. Christina and Fernando were slammed on Saturday and feel bad for having to turn folks away but they had to close because they were running out of food. They make it all from scratch and they simply did not want to serve sub standard food. They even had to order Chinese for the staff . LOL. I'm so glad they are back in Louisville. Great stuff.

I feel like an idiot for waiting to eat at Guaca Mole, We were invited to come out to the soft opening nights too. . I've been really busy and have been cooking a lot more at home these days. We have been talking about going but have never quite made it. Now that the C-J review has come out, it will be about a month or so before it will calm down enough to make me want to brave the crowds.

I know how passionate Fernando and Christina are about making it the food and dining experience at Guaca Mole the best that they can. I applaud the fact that they turned people away for running out of food instead of trying to cobble together something substandard just to keep the money rolling in.
Some I've worked for in the past would never, ever consider doing anything like that. I guess that often times, cash flow overrules the old addage is all it takes is one bad experience for one person to then tell ten of their friends about it. But the same person will only tell two people about their good experience.
I personally consider bad word of mouth to trump cash flow, but then again, I'm a paycheck collector not a paycheck writer.
