We went tonight also. Pizza was good but could have used another minute in the oven, at 1000 degrees its probably tricky to time it right. Outside edge of crust was great but the inside portion was kind of floppy. Everything was great, servers were a little nervous but trying to help and very attentive. House salad was good and all of it was very fresh with great attention to presentation.

We've been running hither and thither for the past week or so with no real opportunity to get back to Coals to further sample the wares. Looks like Sunday might offer us a window of opportunity. Glad to hear that most folks who have tried it have liked it (a lot) and those that were on the fence were understanding enough to realize that it's a work in progress.

Steve, I was planning to go on Sunday until I saw this "Our hours will be Mon-Thurs from 11am to 9:30pm and Fri-Sat from 11am to 11pm." on their website. Please tell me that you have heard differently.

Yeah, that open at 11 am thing - not so much. They said a week, week and a half before lunch hours. The unusual thing was that the front door was unlocked so we walked in and waited to be seated. If they weren't open, why not put a sign on the door? Or lock it.

Anyway, we rearranged our cravings and went to Simply Thai. Excellent as always. Pad Kee Mow, heat level 5. Yum.

The arancini was excellent- fried balls of savory risotto and mozzarella cheese- just the right amount of crispness!! And the sauce....you all were right....wow it's good!!

The Waverly brought a wonderful combination of sweet fig jam and salty prosciutto. The asiago, mozzarella, gorgonzola, and parmigiano-reggiano was the perfect blend of cheeses. I thought the toppings to crust ratio was excellent. The crust was just right as well- though I found it interesting that a post from the same night mentioned it needing to be cooked a tad more. It may vary by pizza. The crust was lighter than most others that I've had- and yet it was not cracker-like at all (which was a plus in my estimation).

The cannoli was a deliciously creamy treat!! The filling was chocolatey, citrusy ricotta, and the outer pastry was nice and firm. I would guess the pastry was flavored with almond (whatever it was, it complemented the cream very nicely!) It was topped with chocolate chips and dusted with powdered sugar.

They don't have iced tea of yet (only pre-sweetened bottled drinks) but I had a gingerale (wish more places served that!)

Wow.

Just got back from a great dinner at Coals. We saddled up to the bar so I could watch The Masters, and were lucky enough to have owner Mark as our server.

Thinking we would sample a few pizzas and eat the rest tomorrow we went w/ the Brownsboro to satisfy my simpleton lassie, who typically only eats pepperoni

The sauce was incredible, bright & as fresh-tasting as any I've ever had on a pie. The pep was great as well, justt an overall perfect balance of everything.........she declared it her favorite pizza in town, and I agreed.

I went w/ a creation of my own, a White Pizza topped w/ Italian Sausage, Carmelized Onions, and Roasted Garlic. :shock: Unreal. Loved the Italian sausge. Not a sausage 'ball' fan, but am a sucker for a crumbly fennel-laced Italian sausage. Again, everything was perfect. Even got the lassie to be 'brave' and try a slice, and she immediately requested another.

Mark tempted us w/ Tiramasu, and having already ready several great things on here, we shared that, and it was dense, creamy, and perfect. Best I've had.

Been eagerly waiting for this place as much as any new spot in a long time, and it lived up to everything. Will be back soon, and often. Great job guys!

Oh, and I'm embarassed to say there were no leftovers as planned. None. Gonna lay on my back for awhile now. :?

We just got home from Coal's as well! We're persistent! Had the Bardstown and DH dubbed it his fav pizza ever! He and Mark talked on and on about coal fired furnaces (DH) and ovens (Mark.) Actually it was quite interesting hearing the technical stuff and I enjoyed the discussion.

We're already planning our next pizza - Margherita.

DH is still fascinated by the coal oven. I think he may want to see it up close next time we're in. Which should be soon.

It certainly is fascinating and the combination of gas with coal in the oven certainly provides a lot of benefits. It really is quite a piece of equipment and artistry. Of course those that use it are really the artists to make such good pizza!

Dean & I stopped in for a late dinner the other nite. He had the roasted tomato soup, I had the gorgonzola lettuce wedge. The salad was excellent! I really liked the soup, he's not the biggest tomato fan - but he's trying! We ordered the arancini but they were out, so we had the meatballs in bechumel sauce - wow! We sopped up every drop of the sauce...
then we had the Brownsboro - for me, it's not pizza w/out pepperoni (except for my beloved Quattro at Boombozz) The crust was perfect, and that sauce :) ! Our server told us Madeline's history with calzones (the first to have frozen calzones sold at Sam's in Washington, if I remember correctly - how cool is that?!) She came over and we discussed it further, and now, all I can say is, I can't wait till they put them on the menu - she told me hers have a very thin, crispy crust, not doughy - well I'm there!

We bought a gift cert. (their 1st cert sale!) for a great young couple - foodies in training (hi Renee & J.R.! :wink: ) The place is very nice - good date nite or low key w/ the kids - an excellent addition to the Louisville pizza AND dining scene :D

PS - Steve - get your bottom in there and create the Steve P - you're holding things up MR!!! 8)
