We are not a sports bar or a super casual "bring the soccer team" pizza restaurant, although we would welcome them with open arms. From our travels we wanted the look and feel of the new artisan pizza restaurants like Chris Bianco and Motorino. I loved that you could go to these places, feel like you went out to dinner for something really special and yet not break the bank. Don't get me wrong, we are casual, but just a little more comfortable. The Vogue location filled the bill perfectly in that it has a lot of charm, good patio, PLENTY of parking and smack in the middle of St. Matthews.

We want to bring two very distinct styles of pizza. Of course a neopolitan style "kinda". I am not a fan of straight neopolitan pizza as it tends to be too flabby and wet. Again, I am a devotee of Chris Bianco where he strays from the straight 00 Caputo Flour and adds good old American wheat to the mixture. I also want to bring the really traditional Coal Fire neo-new york style pizza. Not the New York style pizza by the slice. That is a whole other animal. More along the tradition of Frank Pepe, Sally Apizza, Grimaldi, and Patsy. Instead of the light as air texture of the traditional Italian style pizza, neo new york can be described as chewy and dense yet thinner then neopolitan.

We wil have capacity for 100 people with a party room or overflow dining up stairs. We had been in the food manufacturing business for 25 years so this is a change for us. Outside of New York and New Haven America is lacking a fundamental pizzaiolo tradition. We are approaching this restaurant as a bakery and we are thrilled to have Chef Mike Hungerford on board. His knowledge of the bakery arts, in addition to being a great chef, will help us reach our goals.

So now you got more info then you bargained for! I can go on and on but I won't!

You can do us all a favor and not worry about them! Kentucky may make some very good beer but they haven't really conquered wine yet. A few nice California, Oregon or Washington wines would be nice and you should consider some from Chile.

I would agree, although if they really want a local, Huber Farm & Orchard makes surprisingly good wines, particularly in the modest-price, popular-style wines that would work in a pizzeria.

A few nice California, Oregon or Washington wines would be nice and you should consider some from Chile.

Uhh, PIZZA? ITALY? Hellooooooo??? :lol: Plenty of modest Chianti, Toscano Rosso and Montepulciano d'Abruzzo around, and they go great with Italian and Italian-American fare.

I am so excited about all the buzz. Thank you to all who have welcomed me back. This is going to be a fun ride and look forward to seeing everyone of you'll again. Keep asking all the questions, and don't forget about coming out in late November to see our oven in person. We will trying many different recipes and will look to you for your input.

This has us SO excited! Can you compare this pie to something like Castel Gandalfo in Chicago? They make their own sauce and grow their own herbs, plus make their own mozza fresh daily.We hunt out coal fire pizzas, I even found a great place in St Louis. This has been sorely lacking here. And we can WALK!

About those KY wines..just say no. Have a variety including several by the glass. You'll probably be forced to include a white Zinfandel in there as well, lol!!

Definitely looking forward to trying, especially since its so close to home.

And nothing against our locals, but I'd like to see a variety of Belgians on the beer list.

Sorry, but Falls City is not local. It hasn't been brewed in Louisville since the late 70's I believe. As you were :D

I think the point here is that the new Falls City, although promoted as a local beer, is actually contract-brewed elsewhere, not at a local microbrewery. It's a fine point. I can see how local microbrewers would object to calling it a local, yet it's certainly positioned as a craft beer, made for Louisville, and honors a Louisville heritage with a decent brew.

That's exactly what I was getting at Robin, thank you.
I'm sure that Coal's will be a welcome addition to the pizza scene in louisville and cannot wait to try it.

:? ....Really ? Seriously ? Personally I've found it to be some of the nastiest beer I've ever had in my mouth. Just MHO mind you.
